Vegetable Coagulant and Vegegrana Liquid
Vegegrana liquid vegetable coagulant is produced by extracting macerated and filtered vegetable enzymes (Cynara Carduncolus). Like traditional rennet, our Vegegrana vegetable coagulant decomposes kappa casein into micelles composed of the casein contained in milk. a slow proteolytic action on milk proteins, contributing to the maturation of the cheese.
Its coagulant activity is 1: 6,000 for which about 100 grams of vegetable rennet are needed for every 100 liters of milk. Vegegrana liquid vegetable coagulant is packaged according to the customer's needs in sizes starting from 1 kg.
